Summary:The investigation of the dependence of the macroscopic properties of the disperse systems (emulsions) on the physico-chemical properties of the internal phase, external phase and the surfactant are represented in this article. The relationship between the kinematic viscosity of the internal phase and dynamic viscosity of the disperse system are studied. The numerical dependence of the emulsifying ability of the external phase and surfactant mixture on their component physico-chemical properties was found. The mathematical simulation of these dependences was performed by the nonlinear approximation method and the multilevel simulation method.
