Summary: | Conventional electrophoresis techniques used to identify food allergens are insufficient to separate low molecular mass proteins and peptides. In this paper we performed three different methods which provided an extended resolving power for small proteins. Applying the improved techniques, we were able to separate hazelnut proteins into distinct bands below 10 kDa. |
