Summary:Douglas et al discuss the challenges and considerations for food and nutrition on exploration missions. Developing a food system for Mars missions will be tremendously more challenging than for lunar or ISS missions. A likely Mars mission has crews spending 6 mo speeding away from their home planet: a journey analogous to an ISS trip but without the occasional deliveries of fresh foods.
